All images courtesy of Cup of Excellence.<\/p><\/div>\n<p>The <a href=\"https:\/\/cupofexcellence.org\/\" target=\"_blank\" rel=\"noopener\">Cup of Excellence<\/a> (CoE) coffee competition and auction platform was <a href=\"https:\/\/dailycoffeenews.com\/2019\/11\/11\/still-excellent-after-all-these-years-the-cup-of-excellence-at-20\/\" target=\"_blank\" rel=\"noopener\">born in Brazil more than two decades ago<\/a> and has since expanded to coffee-producing countries all over the world.&nbsp;<\/p>\n<p>Given the Brazil CoE&#8217;s position as an exemplar of international market-building in coffee, it was a big deal last month when the competition featured a major format change.<\/p>\n<h2>Wet, Dry and Experimental<\/h2>\n<p>The 2023 Brazil CoE introduced top 10 winners in three categories \u2014 as opposed to 30 winners in a single category \u2014 under the designations wet, dry and experimental.<\/p>\n<p>The move reflected the wishes of producers who are seeking to protect longstanding reputations regarding coffee flavor profiles and consistency, while also allowing for market-driven innovations in creative post-harvest processing, according to Cup of Excellence Executive Director Erwin Mierisch.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2023\/11\/08\/cup-of-excellence-coffee-competition-adds-experimental-category-in-brazil\/brazil-cup-of-excellence-coe-2023-5\/\" rel=\"attachment wp-att-174724\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-174724\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5.jpg\" alt=\"Brazil Cup of Excellence CoE 2023 5\" width=\"1240\" height=\"1653\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5-225x300.jpg 225w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5-465x620.jpg 465w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5-113x150.jpg 113w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5-768x1024.jpg 768w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-5-1152x1536.jpg 1152w\" sizes=\"(max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>&#8220;This is kind of a way of comparing apples to apples, and giving a fair shot to every process,&#8221; Mierisch recently told DCN by phone. &#8220;It&#8217;s much easier to analyze each of the processes separately.&#8221;<\/p>\n<p>Mierisch, who <a href=\"https:\/\/dailycoffeenews.com\/2023\/07\/13\/erwin-mierisch-named-executive-director-of-ace-and-cup-of-excellence\/\" target=\"_blank\" rel=\"noopener\">took over the international nonprofit&#8217;s top executive position<\/a> in June, said that the change in Brazil was largely precipitated by requests from representatives of the Brazil CoE in-country partner, the <a href=\"https:\/\/bsca.com.br\/index\/home\" target=\"_blank\" rel=\"noopener\">Brazil Specialty Coffee Association<\/a> (BSCA), as well as other Brazilian producers.<\/p>\n<p>Those producer groups, he said, wanted to protect the country&#8217;s decades-old reputation for what have been traditionally marketed as &#8220;pulped natural&#8221; came under the &#8220;wet&#8221; banner, natural-process coffees fell under &#8220;dry,&#8221; and all other eligible coffees reflecting relatively new post-harvest processes involving fermentation prior to depulping are considered &#8220;experimental.&#8221; Those latter category might include labels such as &#8220;anaerobic fermentation&#8221; or &#8220;carbonic maceration.&#8221;<\/p>\n<p>Mierisch told DCN that while either naturally occurring or added yeasts were allowed in the &#8220;experimental&#8221; category, no other flavorings or additives beyond water were.&nbsp;<\/p>\n<h2>&#8216;Louder&#8217; in the Cup<\/h2>\n<p>For several years until 2018, the Brazil CoE maintained separate categories for &#8220;pulped naturals&#8221; the sweetness and acidity really stand out,&#8221; Mierisch said of newfangled-fermentation coffees. &#8220;One of the biggest problems with COE in the recent past \u2014 and I find this to become true in any coffee competition \u2014 it becomes more of an identification game, especially if there are more inexperienced cuppers.&#8221;<\/p>\n<p>Mierisch said that the same phenomenon with post-harvest process identification can also be true when dealing with coffee cultivars.&nbsp;<\/p>\n<p>&#8220;As a [former CoE] head judge, that was a problem I would have,&#8221; Mierisch said. &#8220;For the younger analysts or cuppers, it was harder for them to communicate what they were finding beyond whether that was a Geisha [variety] or anaerobic [process] or whatever.&#8221;<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2023\/11\/08\/cup-of-excellence-coffee-competition-adds-experimental-category-in-brazil\/brazil-cup-of-excellence-coe-2023-4\/\" rel=\"attachment wp-att-174723\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-174723\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4.jpg\" alt=\"Brazil Cup of Excellence CoE 2023 4\" width=\"1240\" height=\"1653\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4-225x300.jpg 225w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4-465x620.jpg 465w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4-113x150.jpg 113w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4-768x1024.jpg 768w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2023\/11\/Brazil-Cup-of-Excellence-CoE-2023-4-1152x1536.jpg 1152w\" sizes=\"(max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>Mierisch noted that the format change thus far applies to the Brazil CoE only, and that changes CoE formats in other countries will only be made through consultations with in-country partners.<\/p>\n<p>Said Mierisch, &#8220;One of our major objectives is to highlight the image of the countries that we work with.&#8221;<\/p>\n<h2>2023 Brazil CoE Winners<\/h2>\n<p>Not to be overshadowed by the format change are the <a href=\"https:\/\/allianceforcoffeeexcellence.org\/brazil-2023\/\" target=\"_blank\" rel=\"noopener\">winners of the 2023 Brazil Cup of Excellence<\/a>.&nbsp;<\/p>\n<p>The farm Fazenda Rio Verde from producer group Ipanema Agr\u00edcola in Mantiqueira de Minas took the top spot in both the wet and experimental categories.<\/p>\n<p>In the former, a pulped-natural Gesha-variety coffee took the competition&#8217;s overall top score with 92.15.
